Σαλάτα με φασόλια μαυρομάτικα – Salad with black eyed beans

Δεν ξέρω αν όντως την τρώνε στον στρατό, ήταν έμπνευση από κάποιον που πέρασε από εκεί πάντως. Είχε τη λογική του απλού και νόστιμου φαγητού, όλα μαζί σε μια γαβάθα και πάμε! Πάμε, φύγαμε. Αλήθεια, πότε ήταν η τελευταία φορά που είπατε ‘πάμε’, που πήρατε μια γενναία απόφαση; Και ποια ήταν άραγε; Πως νιώσατε μετά; Τι έμεινε και τι άλλαξε; Η δική μου πιο πρόσφατη γενναία απόφαση ήταν αρκετό καιρό πριν. Όταν αποφάσισα ν’αφήσω τα ψέματα που λέει και το τραγούδι. Να χαμογελάω όσο περισσότερο μπορώ, να λέω τα πράγματα με τ’όνομα τους και οτι γίνει, να δέχομαι τη ζωή όπως έρθει αλλά να μην συμβιβάζομαι σε οτι είναι σημαντικό για εμένα και να συνεχίσω να μαγειρεύω. Μην αντιστέκεστε, αφήστε τη ζωή να τα φέρει όλα μαζί, οτι και αν έρθει είναι για καλό.

H συνταγή

Yλικά
- 150γρ. μαυρομάτικα φασόλια
- 150γρ. μαρούλι
- 50γρ. ρύζι
- 2 τομάτες
- 2 παντζάρια
- 2 καρότα
- 2 φρέσκα κρεμμυδάκια
- 1 κόκκινη πιπεριά
- ελαιόλαδο
- χυμό απο μισό λεμόνι
- αλάτι
- πιπέρι
Eκτέλεση
- Βράζετε τα φασόλια και το ρύζι χωριστά και τα σουρώνετε.
- Ψιλοκόβετε το μαρούλι, τρίβετε τα καρότα στον τρίφτη, κόβετε τις τομάτες και τα ωμά παντζάρια σε μέτρια προς μικρά κομμάτια και τα βάζετε όλα μαζί σ’ ένα μεγάλο μπολ.
- Προσθέτε τα φασόλια, το ρύζι, το ελαιόλαδο, λεμόνι, αλάτι, πιπέρι και ανακατεύετε καλά…

Tips!
- Μπορείτε να βάλετε κόκκινο λάχανα αντί για μαρούλι ή 75γρ. απο το καθένα.
- Το ‘Φανταρικό’ αν και σαλάτα αποτελεί ένα χορταστικό πιάτο λόγω των φασολιών που μπορείτε να απολαύσετε για βραδινό ή για μια εναλλακτική πρόταση μεσημεριανού μαζί με κάποιο ψάρι.
This recipe was an inspiration from a man who wanted to make a statement for simple and tasty food; it doesn’t have to be necessarily good looking to be delicious. Since all ingredients match just put them all together in a bowl and go! Go, move on. Actually, when was the last time that you said to yourselves ‘Go, move on’, when was the last time that you took a brave decision? And what was that? How did it made you feel? What remained and what changed after that? My most recent brave decision was a while ago. When I decided to ‘get over myself’, again and again and for all the times that I will need to do it. It was when I decided to smile more, be direct and face the music, take life as it comes but don’t surrender for less than I deserve and keep cooking. Don’t fight life, just keep your eyes open, let it bring you what it is that will bring you; whatever comes is for the best.

Ingredients
- 150gr. black eyed beans
- 150gr. green salad
- 50gr. rice
- 2 tomatoes
- 2 beets
- 2 carrots
- 2 spring onions
- 1 red pepper
- olive oil
- juice from half lemon
- salt
- black pepper
Directions
- Boil the beans and the rice separately and drain them.
- Chop the green salad, the spring onions, grate the carrots, cut the tomatoes and the raw beets in medium-small pieces and put them all in a bowl.
- Add the beans, rice, olive oil, lemon, salt, pepper and mix well…

Tips!
- You can use red cabbage instead of the green salad or put 75r. of both.
- Even though this is a salad, it is a very full dish because of the beans protein and so you can enjoy it either as dinner with some fish or light lunch.
